This is an offal located on the back side of Australian Wagyu. A cattle can only has 2-3 kg of outside skirt, which is a very precious cuts. The lean meat and marble are bonded in a perfect ratio, and the texture is very tender and full of flavor. It is the most popular item in Japanese Yakiniku restaurant.
